Chili Weather

chiliBaby it’s cold outside is an understatement. Like most of the nation, we are experiencing colder than normal cold. It is time like this that I am grateful for the vast blessings I have received.
Chili is one of those dishes that has cooks everywhere boasting. Chili cooking contests can bring some serious cooks along with serious money. My chili has never won a contest outside my home but it is a winner inside my kitchen.

Chili
3 pounds ground meat of choice. I am using a combination of venison and pork.
2 25 ounce container red kidney beans, not drained
2 teaspoon beef bouillon
2 cups water
2 tablespoon chili powder
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon thyme
1 teaspoon kosher salt
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper or more to taste
1 teaspoon cumin
1/2 cup chocolate chips
1/2 cup cheddar cheese (topping)

In a dutch oven over medium heat, add the oil. When the oil is hot, (3-4 minutes, add the ground meat and stir to coat with oil. break up the pieces of meat with a wooden spoon to ensure that they brown evenly. The goal is to sear the meat but
Cook it thoroughly. Combine the remaining ingredients and reduce the heat to simmer. Cover the dutch oven and simmer for 4-5 hours. Garnish with cheese, chips…whatever your taste buds desire.
