Local Charter Boat Business Woman Writes Cookbook

Baltimore, MD : It’s a big hobby with very little space. Many Marylanders love to sail the harbor or the bay, but space is a premium on board the boat. That prompted local sportsfishing charter boat businesswoman Margaret Blackwell to feed the need for a boat cookbook. In her new book “Boat Food: The Cookbook for Boaters” she shares recipes that are friendly for small spaces sailing the seas.

Here’s a sneak peek at one of them!

Celery and Apple Salad The crisp, juicy, Granny Smith apple complements the crunchy, anise flavored celery and savory, chilled beets.

Salad ingredients:
1/2 cup (115 g.) celery hearts, trimmed and cut 2 inch (5 cm.) strip
1/2 cup (115 g.) Granny Smith apples, seeded and cut into 2 inch (5 cm.) strip
1 teaspoon (5 mL.) lemon juice
1 white potato (115 g.), cooked, cut 2-inch (5 cm.) strip
1 beet (115 g.) cooked, cut 2-inch (5 cm.) strip

Salad dressing ingredients:
1/4 cup (60 mL.) olive oil
3 tablespoons (45 mL.) lemon juice
1 hardboiled egg, finely minced
1 teaspoon (5 g.) fresh parsley, minced
1/4 teaspoon (1 mL.) kosher salt
1/8 teaspoon (.5 mL.) coarse black pepper

In a bowl, whisk together the olive oil, lemon juice, hard-boiled egg, parsley, kosher salt, and black pepper. Set aside. At this point, the salad dressing can be placed in a chilled wide-mouth thermos and transported to the boat. In a bowl, combine the celery hearts, Granny Smith apples, lemon juice, white potato, and beets. At this point, the salad can be placed in a chilled wide-mouth thermos and transported to the boat. When ready to serve, place the celery salad in a serving bowl. Boat Food recommends the dressing be drizzled down the side of the serving bowl to avoid over dressing the salad. Toss the salad using two forks and serve.
