A true sign of summer is watermelon. The cool and refreshing sweetness is something I look forward to each year. To extend the season of freshness, I have taken to freezing diced watermelon and placing the cubes in freezer bags.

So, my experiment continues. I have used the frozen watermelon in place of ice cubes. The watermelon cubes add a delightful sweetness to a glass of sparkling water. Ice tea is the perfect candidate for a cube or two. Then of course we have the smoothie. I entice the kids to eat yogurt in a smoothie with sweet watermelon. The color is beautiful and it tastes great. How can something so healthy taste so good? Mother nature at work is my response. Do you have any recipes to share that use watermelon as an ingredient?
