The Outdoor Epicurean will be starting a series on canning in the Preservation Kitchen folder. Our gardens generally produce a bumper crop of produce. One idea that I would like to share if you are in the same position as we are is to donate your excess produce to the food banks in your area or meals on wheels which provides meal to the elderly and house bound folks. When my husband came in the house with his first zucchini, I was so excited. Yes, our first zucchini is ready. Now I had to decide what to do with it. Zucchini is a very versatile vegetable. It can be made into bread, relish, ratatouille, bread and butter pickles and it can be dried in the oven like potato chips. In the following days, I will provide you with the above recipes.
