Boat Food’s Outdoor Epicurean continues with a series of real crowd pleasing pasta salads. This salad can be made ahead of time and place in a cooler to take to a game, a boat or your dinner table. Pasta Capri is perfect for a warm weather night. Enjoy.

Pasta Capri


  • 1 box spiral pasta (vegetable)
  • 1 cup fresh peas
  • 8oz fresh mozarella
  • 1/2 cup black olives
  • 10 leaves fresh basil (cut into ribbons)
  • 1 clove fresh garllic (finely minced)
  • 1/2 cup olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1lb cherry tomatoes (sliced into wedges)


Cook the pasta according to the directions on the box. Do not overcook the pasta.
Slice the cherry tomatoes in half. Set aside.
In a bowl, combine the tomatoes, mozzarella cheese, olives, garlic, basil. Add the cooked pasta to the bowl and toss to combine. Set aside.
In a small bowl, combine the olive oil, salt and black pepper. Whisk to combine. Pour the dressing down the side of the serving dish to avoid overdressing the salad
