Easy Vegetable Pizza

 

If I could bottle a fragrance, it would be of a grilled vegetable pizza. Seriously, this is delicious. I would probably eat it everyday.

Grilled Vegetable Pizza

Ingredients

  • 1lb refrigerated bread dough or frozen, thawed
  • 2 tablespoons olive oil (divided)
  • 1/2 cup pizza sauce
  • 1 cup mozarella cheese (grated)
  • 1 cup raw vegetables

Directions

Heat gas grill to low heat. If you are using a charcoal grill, set the grill on low for indirect cooking.
Using a sharp knife to split the dough in half. Smooth each half into a 8 inch pizza. ( The shape does not have to be round.) Use 1/2 of the olive oil to brush both pizzas with the olive oil.
Transfer the pizza to the grill with the oil side down. If you are using a charcoal grill, you would do the same except it would be over indirect heating.
Cook the pizza for 5 - 7 minutes. Please keep loving eyes on the pizza to ensure success. The crust should be golden brown. Turn the pizza over and brush the other side with the remaining olive oil.
Spread the sauce, cheese and assorted vegetables on both of the pizzas. Cover the lid of the grill and bake for 5 minutes or until the cheese is melted and the crust is golden brown. Please keep loving eyes on the pizza to ensure success. ;-)
