The days of spring can be chilly when Mother Nature wants to remind us that she is not quite ready to let us bask in warm sunshine quite yet. For these types of day, I recommend a bowl of hot vegetable soup. This is something that warms the inside of your tummy and heart. Of course, a piece of crusty bread make you feel even better!
Old Fashioned Vegetable Soup
in a large ppot, over medium heat, combine the ingredients. Bring the soup to a boil and reduce the heat to simmer. Cover the pot and cook the soup for 1 hour. When cooled, this soup can be frozen in individuals serving to reheat for a quick and delicious lunch. Enjoy!
