Low-Calorie Hot Spaghetti with Cold Vegetable Sauce

  • 12oz whole wheat spaghetti or linguini
  • 3 cups fresh tomatoes or canned plum tomatoes (coarsely chopped)
  • 2 cloves garlic (finely minced or quartered)
  • 1 1/2 cup cucumber (peeled and seeded)
  • 1/4 teaspoon dried oregano
  • 1/2 teaspoon dried basil or 1 tablespoon fresh basil
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon black pepper
  • 1/2 teaspoon Tabasco sauce (if desired, to taste)


Low-calorie hot spaghetti with cold vegetable sauce is quick and easy to make. It is great with grilled chicken or fish and be served cold with the chicken added as an ingredient.


Cook the pasta according to the directions on the box . Reserve 1/2 cup of the pasta water and drain the pasta in a colander. Transfer the pasta to the serving bowl and add the pasta water to the pasta and stir.
In the bowl, combine the tomatoes, cucumber galic, oregano, basil, salt, pepper and Tabasco sauce.
Combine the tomato mixture with the spaghetti and toss to combine.

This delicious sauce makes meal time a snap to prepare but tastes like you took a long time to prepare. Enjoy!
