Homemade Muffin Mix

Here is a recipe that I made in 1977. I still make it to this day. I hope you enjoy the muffins as much as I have.

Basic Muffin Mix

  • 5 cups whole wheat flour (stone ground if you can get it)
  • 1 cup bran flakes (I use bran cereal)
  • 1 cup wheat germ (refrigerate this after opening or better yet freeze it.)
  • 1 cup yellow corn meal (not the self rising)
  • 1/2 cup soy flour
  • 1 cup nonfat dry milk
  • 1 tablespoon kosher salt
  • 1/4 cup baking powder

In a large mixing bow, combine all of the ingredients. Store in airtight container in the refrigerator.

I have added a recipe to use with the above muffin mix.

Three Grain Muffins

  • 3 cups Homemade Muffin Mix
  • 2 tablespoons honey
  • 1 cup milk
  • 1 Large egg
  • 1/4 cup canola oil

Preheat the oven to 425 degrees Fahrenheit. Oil a muffin pan or line with paper liners.
Add the oil to the mixing bowl first as this will prevent the honey from sticking to the side of the bowl. Combine to the oil, honey, milk and egg. Mix well.
Add the homemade muffin mix to the milk mixture and stir. Use a 1/2 cup ice cream scoop to evenly portion the muffins.
Bake for 15 minutes or until a toothpick inserted in the muffin comes out clean.
