Baked Potato with Apple


This recipe reminds you of Autumn but why wait for the season when you can prepare this delicious recipe any time of the year.  It makes the perfect casserole to take to a church dinner or pot luck dinner.  Enjoy!


Sweet Potatoes and Apples


  • 4 Small medium size
  • 2 cups sliced apples,such as Granny Smith
  • 1/2 cup light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 4 tablespoons unsalted butter
  • 1/2 cup reserved water from cooking the apples (substitute apple juice)
  • 1 tablespoon unsalted butter (used to butter the baking dish)


In a sauce pan, over medium heat, add the potatoes. Add enough water to cover the potatoes plus 1 inch above the potatoes. Boil for 10 minutes or until fork tender. Please keep a loving eye on the potatoes as they have a tendency to boil over if the water boils hard. Drain and set aside to cool. When cool, slice the potatoes to 1/2 inch thick slices. Set aside.
In a saucepan, over medium heat, add the apples. Add enough cold water to cover the apples plus 1 inch above the apples. Boil for 7 minutes or until fork tender. Reserve 1/2 cup of the cooking liquid and drain the apples in a colander. Set aside. When cool. slice the apples to 1/2 inch thickness. Set aside.
Preheat oven to 350 degrees Fahrenheit. Butter a baking dish using 1 tablespoon of butter.
Alternate layers of potatoes and apples in the baking pan. Sprinkle each layer with brown sugar and cinnamon. Place 1/4 teaspoon of butter around the layers of potatoes and apples.
Pour the apple water or apple juice down the side of the baking dish to leave the spice and sugar undisturbed.

Bake for 1 hour.
